Tomato Time Has Finally Arrived!

Every year, I look forward to the bounty of garden-fresh tomatoes. Just like a slice of sweet watermelon on a hot day, a vine-ripened, juicy tomato is the essence of summer.

As a health bonus, tomatoes are known to contain the plant chemicals lycopene and bioflavonoids, which are cancer fighting agents. They protect cells with three powerful antioxidants: vitamin C, vitamin E, and beta-carotene.

Plain sliced tomatoes with a little salt make a delicious snack or addition to any meal. They also add sweetness, tartness and umami to recipes.

Here’s a one dish entrée recipe that I recently tried that has a deep tomato flavor. I used the meaty San Marzano variety, but any flavorful type will work.

Cheesy Tomato Gratin

Ingredients

°6 tablespoons extra-virgin olive oil

°6 ounces crusty baguette, cut into ¾-inch cubes (4 cups)

°3 garlic cloves, minced

°3 pounds garden-fresh tomatoes, cored and cut into ¾-inch pieces

°2 teaspoons sugar

°1 teaspoon salt

°1 teaspoon pepper

°2 – 3 links fully cooked chicken (or other type) Italian sausage, sliced

°8 ounces fresh mozzarella cheese

°1 ½ ounces Parmesan cheese, grated (¾ cup)

°2 tablespoons chopped fresh basil

Directions

  1. Heat ¼ cup oil in 12-inch oven safe skillet over medium-low heat until shimmering (an iron skillet works well here). Add bread and stir to coat. Cook, stirring constantly, until bread is browned and toasted. Transfer bread to bowl.
  2. Adjust oven rack to middle position and heat oven to 350 degrees.
  3. Return now-empty skillet to low heat and add remaining 2 tablespoons oil and garlic. Cook, stirring constantly, until garlic is golden.
  4. Add tomatoes, sugar, salt, and pepper and stir to combine. Increase heat to medium and cook, stirring occasionally, until tomatoes have started to break down and have released enough juice to be mostly submerged, 8 to 10 minutes. Stir in sausage.
  5. Remove skillet from heat and gently stir in 3 cups bread until completely moistened and evenly distributed. Using spatula, press down on bread until completely submerged. Arrange remaining 1 cup bread evenly over surface, pressing to partially submerge. Arrange fresh mozzarella over the top and sprinkle evenly with Parmesan.
  6. Bake until top of gratin is deeply browned, tomatoes are bubbling, and juice has reduced, 40 to 45 minutes.
  7. Remove skillet from oven and let stand for 15 minutes. Sprinkle with basil and serve.
