Simple Fish Tacos With Avocado Mango Salsa

Fish Tacos with Avocado Mango Salsa

This recipe is for 1 pound of fish fillets of choice and makes 8 tacos (soft or hard).

First, make the salsa by combining these ingredients:

  • 1 avocado, cut into cubes
  • ⅔ cup ripe mango, chopped
  • ¼ cup green onions, chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon fresh lime juice
  • salt to taste

Next, in a small bowl combine these flavorings for your fish rub:

  • 1 tablespoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon garlic powder

Rub 1 pound of fish fillets of choice on both sides.

If using hard tacos, follow directions on package to add crispness in oven. If using corn of wheat tortillas, warm them.

Cook the fish:

Place a large skillet over medium heat and add a tablespoon of vegetable oil. Once it is hot, add seasoned fish filets. May need to cook in two batches, depending on the size of your skillet. Check the bottom of the filet after two minutes, and flip if it is nicely browned. Cook other side until filet is brown and flaky.

Assemble tacos:

Place fish pieces first, then other toppings like cheese or tomatoes and finally the avocado-mango salsa.
